New England clam chowder
One potato peeled and cubed
1-2 pounds of chopped or minced clams
( I go to seafood section big bag)
One white onion chopped
1/2 cup diced celery
1 bay leaf
Old bay seasoning to taste
Cup clam juice or fish stock
2 chicken biullion cubes
Cup cooking or white wine
Cup of heavy cream ( or use fat free cream for low fat )
Bacon or salt pork enough to saute onions and celery
I use crock pot
First saute celery and onions in salt pork or diced bacon ,
Then after soft dump everything ( including bacon or salt pork )in pot .
Add all liquids EXCEPT cream - crock 4-6 hours
Last 30 minutes add cream then simmer - do not boil cream .
If desired thicker when adding cream add 1/4 cup corn starch
